“What do I put on my bread as a vegan?” – In many areas it is easy to switch to a vegan diet. But from my Instagram messages I found that there is one dish in particular that most of my readers struggle with: the typical German Brotzeit, aka bread spreads!

What else can you eat with bread, besides sausage, cheese and egg, you wonder? Actually a lot! There is a long list of vegan ideas. I’ve already mentioned a few here. But I want to share the list with you again today, as well as two vegan “sausage” recipes below.

A delicious brunch plate can look like this, for example:

Here you find:

  • vegan omelette, made with an omelette mix, I like this one here A LOT! (not sponsored!)
  • vegan “Lox”
  • tofu with herbs
  • vegan cheese, three recipes here 
  • Ajvar (serbian pepper spread)
  • vegan bread spreads made out of nuts, veggies and nutritional yeast
  • marmelade
  • fresh veggies and sprouts

 

I would also recommend:

  • hummus
  • margarine with salt and spices
  • sliced smoked tofu
  • fried tempeh slices
  • vegan “liverwurst” (recipe below)
  • vegan “mett” (recipe below)

 

 

Recipe for vegan “Pate”

Ingredients:

  • 200g smoked tofu
  • 1 can of kidney beans, drained
  • 1 red onion
  • 1 teaspoon red paprika
  • 1 tablespoon dried parsley
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato paste
  • 1 small garlic clove
  • salt & pepper to taste

 

Cut all ingredients into small pieces beforehand and then blend everything in a blender. If you have time, fry onions, garlic and smoked tofu (all cut into small pieces) beforehand in the pan, then the spread is a little more digestible and tastes a little more intense. Serve with fresh parsley. By the way, the recipe makes a very large amount! You can also cut the ingredients in half.

 

 

Recipe for vegan “Mett” spread

Ingredients:

  • 50g rice waffles
  • 250-350ml warm Water
  • 1/2 onion
  • 1/2 teaspoon red paprika
  • 1 teaspoon parsley
  • salt & pepper to taste

 

Roughly crumble the rice waffles in a bowl. Add the water slowly. Sometimes you need more, sometimes less water. Mash the rice waffles small and soft with a fork. Then add the remaining ingredients and let the whole thing soak for at least 30 minutes. Optional: serve with onions and fresh parsley.

  1. Ich liebe den veganen würzigen Käse von Simply V! Ansonsten esse ich gerne Rührtofu, Avocado und diverse Aufstriche (da gibt’s mittlerweile soooo viel Auswahl) auf Brot und Brötchen.
